The island of Andros - Food specialities

The island of Andros is mostly famous for its unique omelette and for its sweets. A short description of some of the local food specialities follows.

Fourtalia: This is an omelette wih potatoes, sausages and pork meat. It is unique because instead of olive oil, for frying the omelette, pork's fat is used. This pork's fat is called in andros 'glina' and apart from using it for cooking it is also used for preserving meat and sausages. The other interesting part of 'fourtalia' are the sausages. The sausages that are used for making the traditional fourtalia are smoked and have been preserved in the pork's fat, which was mentioned before. Recipe available

Pastitsaki: This is an almond sweet, which resembles much ergolavi.
